Line a plate with paper towels. Fry cannoli in batches of 4 or 5 until golden brown and crispy; transfer to prepared plate to drain excess oil.’s important not to overcrowd the pan so that the oil temperature doesn’t drop too much when you add the cannoli sticks. Fry until golden brown on both sides and transfer to paper towels as they finish cooking.’t forget that once you’ve added the sticks to the hot oil it will take them awhile to cook through so don’t try flipping them too soon! Depending on how thick your sticks are it could take up to 6 minutes per batch.)
